kale is one of my favorite vegetables. saute it in olive oil, add salt and pepper, balsamic vinegar, and a diced apple (and sliced almonds/walnuts if you're feeling fancy). add sausage if you're not veg. or the next time you heat up a can of soup, just throw a handful of shredded kale in the pot at the beginning. very tasty and makes the soup go a lot further.

btw, kale and collard greens freeze very well. i always buy a big bunch of each and slowly eat my way through the kale from the fridge while cutting the collard greens into thin strips and freezing it. i like it better than frozen spinach because it's much more substantial, and cheap as all get-out. throw a handful into ramen! mm.

+1 on the kale chips, also on the stovetop espresso.

Try incorporating kale into mashed potatoes...sautee in garlic and olive oil, just long enough so they're not tough, but not so long that they get that awful overcooked green vegetable taste. Kale has lots of body and crunch, and I like to hold onto that.

Another staple recipe in our apartment is beans and greens: http://www.rachaelrayshow.com/food/recipes/deep-winter-minestra-beans-and-greens-soup/
You can leave out the meat, it's still delicious.I thought that might be you! But there was no shimmy-shake so I couldn't be sure.

Yeah, these guys have the right idea.
Also, try turnip greens and mustard greens in addition to the kale and collards. For serious. You've never realized what mustard really smells like until you start cutting up a pound of wet mustard greens. I prefer a nice mix of all of the above.

For a nice, decidedly non-vegan smoky pot o' greens: parboil them, chop them up, throw them in a pot on low heat, and add fresh garlic, powdered garlic, oregano, celery salt, black pepper, and lots of bacon grease and fat back. Let simmer on low for about 20-30 mins. Taste test regularly for doneness and don't overcook.

The vegan version with olive oil instead of pork fat is awesome too, and it seems to bring out the natural sugars in the greens more. The ones I made at Thanksgiving came out deliciously sweet. We'll get you a cat, don't worry -t-honks
